Affidelice Au Chablis

Affidelice au Chablis is a soft cheese aged by renowned affineur Rodolphe Le Meunier. His dedication and particular attention to developing the flavor of his cheeses, make his selection unique. Similar to the better-known Epoisses, Affidelice is a pungent, creamy cheese. What distinguishes this cheese from others is the wash of Chablis wine it receives during the aging process. This helps the cheese to develop its characteristic orange rind, pungent aroma, and soft, buttery texture. As the cheese ages, the aroma becomes more pronounced and the texture becomes custardy. Though the fragrance comes quite strong, the flavors of this French cheese are lovely with notes of butter and roasted meats.
