Appenzeller Black Label

According to legend, Appenzeller was used as a form of currency during Charlemagne reign. What is certain is that today it is one of the most famed Swiss cheeses. Generally, you can find wheels of Appenzeller with three different aging: Classic Appenzeller, which is aged from 3 to 4 months, Surchoix Appenzeller, aged from 4 to 6 months and Extra Appenzeller, that is aged for a minimum of 6 months and is recognizable by the black label. We only carry this special black label version, beloved for its assertive meaty flavor. During the aging period, the rind of this cow’s milk cheese is regularly washed with brine and seasoned with wine and a special blend of spices, known only by the cheesemaker. The final product is a unique semi-firm cheese, characterized by nutty notes and a slightly sharp flavor.
