Bocconcino

Bocconcino means ‘little mouthful’and is a version of traditional Tomino cheese. This version uses 100% goat’s milk. It is a creamy table cheese with a mildly goaty flavor. The thin bloomy rind encases a delicate creamy paste. Though delicious eaten as is, when warmed, the flavors of the Bocconcino open up, becoming more fragrant and robust. A traditional preparation is to wrap the small cheese in prosciutto and warm them in a pan for a creamy, salty beginning to your meal. Bocconcino is produced on the breathtaking hills and meadows of the Langhe agricultural area of Piemonte. The Langhe is the homeland of famous wines such as Barolo and Barbaresco, of delicious hazelnuts and, some of the best Italian cheeses. Robiola and Castelmagno are just a couple of names belonging to the prestigious range of dairy products which make this region a culinary focal point. Organoleptic characteristics Aspect and consistency: soft, creamy with thin bloomy rind. Taste: sweet, buttery, with slight traces of yeast from the rind. Serving suggestions Fruity white wines, lagers. Marmalade, marrow and ginger preserve. Fresh fruit. Walnut or raisin bread.
