Made by La Bottera in the town of Marozzo, this Cevrin is made with a blend of goat’s milk and cow’s milk from the family-run farm. Now in its third generation, the farm operates a dairy as well as a restaurant specializing in local Piemontese cuisine. They focus on regional classics and are known for their delicate, fresh cheeses. This artisanal cheese celebrates the bounty of the land with its crust of herbs and flowers foraged from around the farm. Changing throughout the year, Cevrin highlights the seasons using whatever is growing at the time lending depth and flavor to this tangy, creamy cheese
