Challerhocker is a washed rind cheese with a dense, smooth interior. This semi-hard cheese has a creamy feel on the palate and complex flavors with notes of butter, peanuts, roasted meat and herbs. Made in a dairy well-known for its terrific Appenzeller cheese, Kรคserei Tufertschwil began making their own proprietary cheeses like Challerhocker some years ago with great results. The name Challerhocker means ‘œsitting in the cellar’. As it were, this robust Swiss cheese is aged in the cellar for a period of ten months. The full flavored cheese that results from the careful making and aging processes create a remarkably flavorful and savory Alpine cheese.
