Cured Tuna Heart


Cured Tuna Heart is a traditional ingredient used in Sardinian cuisine. Commonly grated over pasta or used to flavor sauces, this unique product adds a savory depth. Though it makes an excellent addition as an ingredient, the hears are also sliced paper thin and simply dressed with olive oil and lemon juice. The process for curing the hearts is similar to that of bottarga, the fish roe frequently featured in Sardinian cuisine. Both are salted, pressed and dried which preserves the product. It also intensifies the flavors which are briny, salty and strong. Serving suggestions Use Dry Tuna Heart in appetizers, seasoned with extra virgin olive oil, or grated on pasta.
