Fig Leaf-wrapped Goat Robiola

This is a special variation of Robiola, a traditional Italian cheese produced in the Piedmont region. While robiola can be made from any variety of milks, this particular version is made from 100% goat milk. The young forms are wrapped in fig leaves and aged for an additional three weeks. As this creamy cheese ages, it becomes denser and more compact in texture while developing a rich, runny layer just under the rind. In addition to lending a visual appeal, the fig leaves give the robiola a unique flavor that is reminiscent of coconuts.
