Black winter truffles (Tuber Melanosporum) or Perigord Truffles are among the most expensive delicacies on earth. They will enrapture your senses with their wonderful aroma and taste. Hunted by trained and certified experts, along with their canine or porcine companions, these rare “Diamonds of Perigord” are the second most valuable and sought after truffles in existence. Our black winter truffles ripen from mid-November until mid-March in the Italian regions of Piemonte, Umbria, and Marche. They grow underground in symbiosis with various types of trees like beech, poplar, oak, birch, hazel, and pine. Tips for storing truffles Fresh truffles are a highly perishable product intended to be used as soon as possible. Due to their perishable nature they lose weight, flavor, and aroma each day. Stored properly truffles can be kept for up to five days. To maximize shelf life unwrap the truffles as soon as you receive them. Line the bottom of a small glass or plastic airtight container with cotton or paper towel. Wrap each truffle in a small piece of dry paper towel and store, tightly sealed, in the container. Keep the container in the refrigerator until you are ready to use the truffles. The paper towel wrapping should be replaced every day until you are ready to use the truffle. Enjoy! Serving suggestions Try Black winter truffles with fettuccine or ravioli, or simply grated over poached or scrambled eggs. Wonderful with a scallop appetizer, black winter truffle is also superb on main courses like fillet steak or under the skin of a roast. Depending on the complexity of the dishes, you can pair black truffles with great italian red wines like Sagrantino, Brunello, Barolo, or with a still white wine like Vernaccia di San Gimignano.
