Furthermore, it is a very versatile cheese, used to add flavor to any recipes, perfect as a table cheese, for instance with a sprinkle of balsamic vinegar of Modena, or in its creamy version, melted on pasta. All DOP Parmigiano Reggiano must be aged for at least 12 months. The Parmesan cheese we recommend is a Stravecchio, a 24 month Parmigiano Reggiano. These wheels, thanks to a longer period of maturation, achieve earn nutty, caramel notes and delicious crunchy protein crystals typical of excellent Parmigiano.
