Pecorino Peperino

Peperino pecorino is an artisan Italian cheese made in Tuscany from sheep’s milk. Early in the aging process, the whole wheel of cheese is placed in whole peppercorns to age. When it reaches full maturity, the rind is completely covered in peppercorns, which gives Pecorino Peperino cheese a sharp but delicate aroma. The marriage of sweet and nutty sheep’s milk with the spiciness imparted by the peppercorns results in a rich, full-mouth flavor that is as exciting as it is excellent!
