Prosciutto Crudo Italiano

Prosciutto Crudo is an Italian delicacy made by dry-curing a ham, or hind leg, of a pig. On average the meat is hung in a cold place to age for two years before being thinly sliced and served as an antipasto, on pizza, in a pasta dish or alongside vegetables. This particular Prosciutto is called “crudo” meaning “raw” in Italian because like most cured ham, it is meant to be served without cooking. Indeed the curing process effectively cures the meat.
