Ricotta Stagionata

Ricotta-Stagionata

Sensibus works closely with Pietra del Sale dairy in Basilicata, Southern Italy to produce this delicious Ricotta Cheese. Very similar to Ricotta Salata, this Ricotta Stagionata cheese, means “aged Ricotta” in Italian. It is produced using the whey left over from making their other sheep’s milk cheese, Pecorino di Filiano. This aged Ricotta cheese is a salted, hard ricotta that is often grated on food instead of Parmesan. Ricotta stagionata is also excellent eaten as is! Organoleptic properties Aspect and texture: hard, white paste Taste: flavorful and piquant Serving suggestions Pair aged ricotta with white wines and taste it with green tomato chutney, olives in brine. Try pasta without tomato sauce and dressed with grated cheese, shredded over fresh, spring vegetables. Or make traditional Sicilian pasta alla Norma.
