Robiola Nostrana


Robiola Nostrana is a soft Italian cheese produced in the same area as Taleggio. In fact, the initial steps of this Robiola’s cheese-making process are the same as Taleggio’s. The difference is that Robiola Nostrana is aged without ever being “washed”. Therefore, it never develops the “washed rind” typical of Taleggio. On the contrary, after 2 months of aging this creamy cheese develops an edible bloomy white rind with a sweet mushroomy flavor.
