Toma Cremosa di Pecora (creamy sheep’s milk cheese) or “Carletta” (as it is often known) is a soft ripened cheese made with sheep’s milk, just as the name would have you think. Carletta distinguishes itself by being a soft-ripened sheep’s milk cheese, a rarity in the cheese world. It has a very soft and slightly elastic paste, and a delicate and buttery taste. The mild sheepiness of the cheese is perfectly balanced by the hints of earth of its rind. Organoleptic properties Aspect and texture: thick white rind reminiscent of mushrooms with a smooth creamier interior. Taste: mildly floral with complexity in the finish. Serving suggestions: Lovely with a mineral heavy white wine like a Riesling. On a cheese plate, this cheese is so wonderful it needs very little adornment!
