Tomme Brulee

Tomme Brulee is a sheep’s milk cheese produced in the dairies in the foothills of the Mount Baigura, in the western Basque country. An incredible semi-firm cheese with a dense paste and a sweet, nutty flavor, Tomme Brulee is both unique and beloved. This particular version of Tomme Brulee cheese is aged for 4 to 6 months and its rind is burned, as perceivable from the outer dark scotch marks and the slightly caramelized flavor. Organoleptic properties Aspect and texture: burnt-looking rind. Taste: nutty and caramelized. Serving suggestions This cheese goes well with just about any accompaniment you can imagine, but shines particularly with Red wines of the Pays d’Oc.
