Torta di Peghera is an artisan Italian cheese produced from raw cow’s milk in Peghera, Val Taleggio. It has a lot in common with Taleggio cheese. In fact, cheese-makers created this cheese starting from the recipe of Taleggio. Torta is Italian for “cake” and as the name implies, this cheese is round, unlike square taleggio. Torta di Peghera is a washed rind cheese, with a creamy paste and a sharp aroma enriched by earthy and mushroom notes. Organoleptic properties Aspect and texture: soft, ivory paste, softer towards the edges with few holes. Rusty reddish rind. Taste: very intense and savory, delicious! Serving suggestions A dry wine like Pinot Gris or a Piemontese Red like Barolo or Barbaresco. This cheese is delicious on its own and needs no adornment.
