Paglierina is a traditional Italian cheese from Piemonte whose names comes from the Italian word for straw (paglia), the material on which this artisan cheese is aged and what gives Paglierina its earthy notes. Paglierina is a delicious cheese produced from a blend of two milks: whole cow, and sheep milk. It has a soft texture, melting center, and a mild flavor. Even more fantastic is the Truffled Paglierina, a luxurious version of the cheese made by adding Italian truffles foraged from nearby the dairy.
